Ingredients

4 salmon fillets (6 ounces each)

4 tablespoons unsalted butter, melted

4 cloves garlic, minced

2 tablespoons fresh parsley, chopped

2 tablespoons fresh dill, chopped

1 teaspoon lemon zest

Juice of 1 lemon

Salt and black pepper, to taste

1 cup cherry tomatoes, halved

1 lemon, sliced

Aluminum foil (for packaging)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Herb Mixture: In a small bowl, combine the melted butter, minced garlic, chopped parsley, chopped dill, lemon zest, and lemon juice. Mix well and set aside.

Assemble the Packets: Cut four pieces of aluminum foil, each large enough to create a sealed packet around a salmon fillet. Lay one salmon fillet in the center of each piece of foil.

Season the Salmon: Drizzle the herb butter mixture generously over each salmon fillet. Season with salt and black pepper to taste.

Add the Veggies: Divide the cherry tomatoes evenly among the packets, placing them around the salmon fillet. Add a slice of lemon on top of each fillet for an extra flavor boost.

Seal the Packets: Fold the sides of the aluminum foil over the salmon and veggies, creating a sealed packet. Make sure that it’s tightly secured to trap steam during cooking.

Bake: Place the foil packets on a baking sheet and transfer to the preheated oven. Bake for about 15-20 minutes, depending on the thickness of the fillets, until the salmon is cooked through and flakes easily with a fork.

Serve: Carefully open the packets (watch out for steam) and serve the salmon hot with the roasted tomatoes and drizzled juices from the packet. Enjoy!
