Ingredients

For the Grits:

1 cup stone-ground grits

4 cups chicken broth

1 cup shredded sharp cheddar cheese

1/2 cup heavy cream

2 tablespoons butter

Salt & pepper to taste

For the Cajun Shrimp:

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

1 medium onion, chopped

1 bell pepper (red or green), chopped

2 garlic cloves, minced

1 teaspoon Cajun seasoning

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (adjust to taste)

1 tablespoon Worcestershire sauce

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Additional Ingredients:

1 cup breadcrumbs (optional, for topping)

1/4 cup grated Parmesan cheese (optional, for topping)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Grits: In a medium saucepan, bring the chicken broth to a boil. Slowly stir in the grits, reduce the heat to low, and cook, stirring frequently, for about 20-25 minutes until thickened. Remove from heat and stir in the cheddar cheese, heavy cream, butter, salt, and pepper. Mix until smooth and set aside.

Cook the Shrimp: In a large skillet over medium heat, add olive oil. Once hot, add the chopped onion and bell pepper. Sauté for about 5 minutes until softened. Add minced garlic, Cajun seasoning, smoked paprika, cayenne pepper, Worcestershire sauce, and lemon juice. Stir to combine.

Add the Shrimp: Add the shrimp to the skillet and cook for 3-5 minutes, or until they turn pink and opaque. Be careful not to overcook the shrimp. Remove from heat.

Combine: In a large mixing bowl, gently combine the cooked grits and the Cajun shrimp mixture. Mix well to distribute the shrimp evenly throughout the grits.

Assemble the Casserole: Pour the mixture into a greased 9x13-inch baking dish. If you'd like a crunchy topping, sprinkle the breadcrumbs and Parmesan cheese on top for added texture.

Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until heated through and the top is slightly golden.

Garnish: Once out of the oven, let it cool for a few minutes. Garnish with freshly chopped parsley before serving.

Serve: Scoop into bowls or plates, ensuring each serving gets a good amount of shrimp and cheesy grits.
