Ingredients

1 lb large shrimp, peeled and deveined

1 cup long-grain white rice

2 cups chicken broth

1 medium onion, diced

1 red bell pepper, diced

1 green bell pepper, diced

3 cloves garlic, minced

2 tablespoons Cajun seasoning

1 teaspoon smoked paprika

1 teaspoon dried oregano

½ teaspoon salt (to taste)

¼ teaspoon black pepper

1 tablespoon olive oil

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Sauté the Vegetables: In a large skillet over medium heat, heat the olive oil. Add the diced onion, red bell pepper, and green bell pepper. Sauté for about 5-7 minutes or until the vegetables are softened. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

Cook the Rice: Stir in the rice and let it toast for about 2 minutes, stirring constantly. This will give it a nice nutty flavor.

Add Seasonings and Broth: Sprinkle in the Cajun seasoning, smoked paprika, oregano, salt, and black pepper. Mix well to ensure the rice is coated with the seasonings. Pour in the chicken broth. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 15 minutes, or until the rice is tender and has absorbed the liquid.

Prepare the Shrimp: While the rice is cooking, in a separate bowl, toss the peeled and deveined shrimp with a bit of Cajun seasoning (about 1-2 teaspoons) for extra flavor.

Add Shrimp to the Skillet: Once the rice is cooked, gently fold the seasoned shrimp into the skillet. Cover and cook for an additional 5 minutes or until the shrimp turn pink and opaque.

Garnish and Serve: Remove from heat. Sprinkle with sliced green onions and fresh parsley. Serve with lemon wedges for drizzling over the top for extra brightness. Enjoy your Cajun Shrimp & Rice Skillet!
