Ingredients

2 large onions, thinly sliced

2 tablespoons olive oil

Salt, to taste

1 teaspoon sugar

1 teaspoon balsamic vinegar

1 cup feta cheese, crumbled

1 teaspoon dried oregano

1 teaspoon garlic powder

4 large flatbreads or naan

Fresh parsley, chopped (for garnish)

Optional: Red pepper flakes for a spicy kick

Instructions

Caramelize the Onions: In a large skillet, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook for about 20-25 minutes, stirring occasionally, until the onions are soft and golden brown.

Add Flavor: Once the onions are caramelized, sprinkle the sugar over them. Stir to combine and cook for an additional 2-3 minutes until the sugar is dissolved and the onions are glistening. Add the balsamic vinegar, stir, and remove from heat.

Prepare the Filling: In a mixing bowl, combine the crumbled feta cheese, dried oregano, and garlic powder. Stir in the caramelized onions until evenly mixed. Adjust the seasoning with more salt or pepper if necessary.

Stuff the Flatbreads: Take each flatbread and carefully spread a generous amount of the onion and feta mixture in the center, leaving some space around the edges. Fold the flatbread in half or roll it up, pressing the edges to seal.

Cook the Flatbreads: In a clean skillet or griddle over medium heat, lightly oil the surface. Place the stuffed flatbreads on the skillet and cook for about 3-4 minutes on each side until crispy and golden brown. If needed, you can press them down with a spatula for even cooking.

Serve: Once cooked, remove from heat and let them rest for a minute. Optionally, sprinkle with chopped fresh parsley and red pepper flakes. Cut into halves or quarters to serve, and enjoy warm!
