1 large head of cauliflower, cut into florets

1 cup plain yogurt (dairy or plant-based)

2 tablespoons tikka masala spice blend

1 tablespoon lemon juice

2 tablespoons olive oil

1 onion, finely chopped

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 green chili, finely chopped (optional)

1 can (15 oz) diced tomatoes

1 cup coconut milk

2 tablespoons fresh cilantro, chopped (for garnish)

Salt and pepper, to taste

Cooked basmati rice or naan, for serving

Instructions
 

Marinate the Cauliflower: In a large bowl, mix the yogurt, tikka masala spice blend, lemon juice, salt, and pepper. Add the cauliflower florets to the bowl and toss to coat evenly. Let it marinate for at least 30 minutes (or up to 2 hours in the refrigerator for deeper flavor).

    Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

      Roast the Cauliflower: Spread the marinated cauliflower florets onto the prepared baking sheet in a single layer. Drizzle with olive oil, then roast in the preheated oven for 25-30 minutes, or until golden and slightly crispy, flipping halfway through.

        Prepare the Tikka Masala Sauce: In a large skillet or saucepan, heat a little olive oil over medium heat. Add the chopped onion and sauté until translucent (about 5-7 minutes). Stir in the garlic, ginger, and green chili (if using) and cook for an additional 2 minutes until fragrant.

          Add Tomatoes and Coconut Milk: Pour in the diced tomatoes and their juice, and let simmer for about 5 minutes. Add the coconut milk, stirring well to combine. Allow the sauce to simmer for another 10-15 minutes, stirring occasionally, until it thickens. Adjust seasoning with salt and pepper to taste.

            Combine and Serve: Gently fold the roasted cauliflower into the tikka masala sauce, ensuring all florets are coated. Simmer together for another 5 minutes.
