2 cups cooked jasmine rice (preferably chilled)

1/2 cup diced prosciutto

1/2 cup diced salami

1/2 cup shredded cheddar cheese

1/2 cup sliced green olives

1/2 cup chopped pickles (dill or sweet, based on preference)

1/4 cup diced pepperoncini

2 tablespoons olive oil

3 large eggs, lightly beaten

3 green onions, chopped

2 tablespoons soy sauce

1 tablespoon Dijon mustard

Salt and pepper, to taste

Optional: Fresh herbs (like parsley or chives) for garnish

Instructions
 

Prep the Ingredients: Gather all the ingredients and prepare them by dicing the prosciutto and salami, shredding the cheddar cheese, and chopping the pickles and green onions. Make sure your rice is cold to prevent clumping.

    Heat the Oil: In a large skillet or wok, heat the olive oil over medium heat.

      Scramble the Eggs: Pour the beaten eggs into the skillet and scramble until just set. Remove from skillet and set aside.

        Sauté the Meat: In the same skillet, add the diced prosciutto and salami. Sauté for 2-3 minutes until they become slightly crispy and fragrant.

          Add the Rice: Increase the heat to medium-high and add the chilled jasmine rice to the skillet. Break apart clumps and stir-fry for about 5 minutes, allowing the rice to get some color and heat through.

            Incorporate the Extras: Reduce heat back to medium and add the cooked eggs, cheddar cheese, green olives, pickles, and pepperoncini to the rice mixture. Stir until everything is well combined.

              Season Your Rice: Drizzle the soy sauce and Dijon mustard over the top. Stir well to incorporate. Season with salt and pepper to taste, adjusting ingredients based on preference.
