4 large ears of fresh corn, husked

1 cup cherry tomatoes, halved

1 red bell pepper, cut into 1-inch pieces

1 zucchini, sliced into ½-inch rounds

½ cup red onion, cut into 1-inch pieces

1 can (15 oz) black beans, rinsed and drained

3 tablespoons olive oil

2 tablespoons chipotle adobo sauce (from canned chipotle peppers)

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh lime wedges, for serving

Fresh cilantro, chopped, for garnish

Skewers (metal or soaked bamboo)

Instructions
 

Prepare the Corn: Cut the corn kernels off the cob using a sharp knife and set aside. If using whole ears, you may choose to grill them first, then cut off the kernels after charring.

    Marinate the Vegetables: In a large bowl, combine the corn kernels, cherry tomatoes, red bell pepper, zucchini, red onion, and black beans. In a smaller bowl, whisk together the olive oil, chipotle adobo sauce, garlic powder, smoked paprika, salt, and pepper. Pour the marinade over the vegetables and toss to coat. Let it marinate for at least 30 minutes.

      Assemble the Skewers: Preheat your grill to medium-high heat. Thread the marinated vegetables onto the skewers, alternating between different types for a colorful presentation.

        Grill the Skewers: Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.

          Serve: Remove the skewers from the grill and let them cool for a few minutes. Squeeze fresh lime juice over the top and garnish with chopped cilantro before serving.
