1 lb ground beef

1 cup uncooked long-grain white rice

3 cups beef broth

1 can (15 oz) diced tomatoes with green chilies

1 onion, finely chopped

2 cloves garlic, minced

1 cup frozen corn

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

Fresh cilantro or parsley, for garnish (optional)

Instructions
 

Cook the Beef: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

    Brown the Beef: Increase the heat to medium-high and add the ground beef to the skillet. Season with salt, pepper, chili powder, and cumin. Cook until the beef is browned and fully cooked, about 5-7 minutes. Drain any excess fat.

      Add Rice and Liquids: Stir in the uncooked rice, beef broth, and diced tomatoes (including their juice). Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for about 18-20 minutes, or until the rice is tender and has absorbed most of the liquid.

        Include Veggies: Once the rice is cooked, stir in the frozen corn and half of the cheddar and mozzarella cheese. Mix everything evenly and remove from heat.

          Cheese It Up: Sprinkle the remaining cheese on top of the beef and rice mixture. To melt the cheese, either cover the skillet and allow it to sit for a few minutes or place it under the broiler for 2-3 minutes until bubbly and golden.

            Garnish and Serve: Remove from heat, garnish with fresh cilantro or parsley if desired, and serve hot.
