1 lb ground beef

2 cloves garlic, minced

1 bell pepper (any color), diced

1 medium zucchini, chopped

1 cup corn (fresh or frozen)

1 cup cherry tomatoes, halved

1 teaspoon Italian seasoning

1 teaspoon paprika

Salt and pepper to taste

2 cups shredded cheddar cheese

2 tablespoons olive oil

Fresh parsley or basil, chopped (for garnish)

Heat the skillet: In a large skillet, heat the olive oil over medium heat. Once hot, add the diced onion and sauté for about 3-4 minutes until softened.
