1 cup long-grain white rice

2 cups vegetable broth

2 cups fresh broccoli florets

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 medium onion, finely chopped

3 cloves garlic, minced

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

1/2 teaspoon garlic powder

1 tablespoon olive oil

1/2 cup milk

1/4 cup sour cream

1 cup crushed butter crackers (for topping, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch casserole dish with cooking spray or butter.

    Prepare the Rice: In a medium saucepan, combine the rice and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, until the rice is tender and the broth is absorbed.

      Cook the Broccoli: While the rice is cooking, bring a pot of water to a boil. Add the broccoli florets and blanch for about 2-3 minutes until bright green and slightly tender. Drain and immediately rinse with cold water to stop the cooking process. Set aside.

        Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent (about 4-5 minutes). Add minced garlic and cook for an additional 1 minute until fragrant.

          Combine the Ingredients: In a large mixing bowl, combine the cooked rice, sautéed onion and garlic, blanched broccoli, shredded cheddar cheese, mozzarella cheese, Parmesan cheese, 1/2 cup milk, sour cream, salt, black pepper, paprika, and garlic powder. Mix well to combine all ingredients.

            Transfer to Casserole Dish: Pour the mixture into the prepared casserole dish, spreading it evenly. If desired, sprinkle crushed butter crackers on top for an additional crunchy texture.

              Bake the Casserole: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the top is bubbly and golden.
