2 cups cooked chicken, shredded or diced

3 cups fresh broccoli florets (or frozen, thawed)

1 cup long-grain white rice, uncooked

3 cups chicken broth

1 cup shredded cheddar cheese (plus more for topping)

1 cup cream of chicken soup (or homemade equivalent)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

Salt and pepper to taste

½ cup breadcrumbs (optional for crunch)

2 tablespoons olive oil or butter

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

    Prepare the Casserole Base: In a large mixing bowl, combine the cooked chicken, broccoli florets, uncooked rice, chicken broth, cream of chicken soup, garlic powder, onion powder, paprika, salt, and pepper. Stir until everything is evenly coated.

      Transfer to Baking Dish: Grease a 9x13 inch baking dish with olive oil or butter. Pour the chicken and rice mixture into the dish, spreading it out evenly.

        Add Cheese: Sprinkle the shredded cheddar cheese evenly over the top of the casserole mixture. If you desire extra cheesiness, add a little more cheddar than suggested!

          Optional Crunch: If you like some crunch, mix the breadcrumbs with a tablespoon of olive oil or melted butter, then sprinkle it over the cheese layer.
