Cheesy Green Chili Pinwheel Bites

8 oz cream cheese, softened

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 can (4 oz) diced green chilies, drained

1 tsp garlic powder

1 tsp onion powder

½ tsp smoked paprika

Salt and pepper, to taste

4 large flour tortillas (10-inch size)

½ cup chopped fresh cilantro (optional)

1 cup sour cream (for dipping)

Instructions
 

Prepare the Cheese Mixture: In a large mixing bowl, combine the softened cream cheese, shredded cheddar cheese, shredded Monterey Jack cheese, diced green chilies, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until well combined and creamy.

    Spread the Mixture: Lay one tortilla flat on a clean surface. Using a spatula or the back of a spoon, spread about ¼ of the cheese mixture evenly over the tortilla, leaving a small border around the edges.

      Add Optional Cilantro: If you like, sprinkle some chopped fresh cilantro over the cheese mixture for added flavor.

        Roll It Up: Starting from one edge, carefully roll the tortilla tightly into a log. Ensure it is rolled uniformly to maintain even bites. Repeat this process for the remaining tortillas.

          Chill the Rolls: Wrap each rolled tortilla in plastic wrap and place in the refrigerator for at least 1 hour to firm up. This will make slicing easier.

            Slice the Pinwheels: After chilling, remove the plastic wrap and place the roll on a cutting board. Using a sharp knife, slice the roll into 1-inch wide pinwheel bites. Repeat for all rolls.

              Serve with Dipping Sauce: Arrange the pinwheel bites on a platter and serve with a side of sour cream for dipping.
