4 boneless, skinless chicken breasts

1 cup Hatch green chilis, diced (fresh or canned)

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon cumin

Salt and pepper to taste

½ cup breadcrumbs (optional, for topping)

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Prepare the Chicken: Pat the chicken breasts dry and season both sides with salt, pepper, garlic powder, onion powder, and cumin.

      Make the Cheese Mixture: In a large mixing bowl, combine the softened cream cheese, half of the cheddar cheese, half of the Monterey Jack cheese, diced Hatch green chilis, smoked paprika, and a pinch of salt and pepper. Mix until well combined.

        Assemble the Dish: Place the seasoned chicken breasts in a greased 9x13 inch baking dish. Spoon the cheese mixture evenly over the chicken, ensuring each piece is well coated.

          Add Cheese and Breadcrumbs: Sprinkle the remaining cheddar and Monterey Jack cheeses on top of the cheese mixture. If desired, add breadcrumbs for extra texture.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Then remove the foil and bake for an additional 15-20 minutes or until the chicken is cooked through (internal temperature should reach 165°F/74°C) and the cheese is bubbly and golden.

              Garnish and Serve: Once done, let the dish rest for about 5 minutes. Garnish with fresh cilantro before serving for a pop of color and flavor.
