Cheesy Ranch Potato Casserole

2 lbs baby potatoes, halved

1 cup sour cream

1 cup shredded cheddar cheese

1 cup ranch dressing

1/2 cup crispy bacon bits

1/2 cup green onions, chopped

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon paprika

Salt and pepper to taste

1 cup panko breadcrumbs (optional for topping)

2 tablespoons olive oil (if using panko)

Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9x13 inch casserole dish with cooking spray or a little olive oil.

    Prepare Potatoes: In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook for about 10-12 minutes until they are fork-tender. Drain the potatoes and let them cool slightly.

      Mix the Casserole Base: In a large mixing bowl, combine sour cream, ranch dressing, garlic powder, onion powder, paprika, salt, and pepper. Mix well until all ingredients are fully incorporated.

        Combine Ingredients: Gently fold in the cooked potatoes, half of the cheddar cheese, crispy bacon bits, and half of the green onions into the ranch mixture until the potatoes are evenly coated.

          Transfer to Baking Dish: Spoon the mixture into the prepared casserole dish, spreading it out evenly.

            Add Toppings: Sprinkle the remaining cheddar cheese over the top of the casserole. If you want a crunchy topping, mix the panko breadcrumbs with olive oil until coated and sprinkle them over the cheese.
