8 oz (about 2 cups) penne pasta

2 tablespoons olive oil

1 medium onion, chopped

3 cloves garlic, minced

8 oz (about 2 cups) cremini or button mushrooms, sliced

4 cups fresh spinach (or 1 cup frozen, thawed and drained)

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

1 cup ricotta cheese

1 cup grated mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1/2 teaspoon red pepper flakes (optional)

2 cups marinara sauce

Fresh basil or parsley for garnish

Cook the Pasta: Preheat your oven to 375°F (190°C). In a large pot, boil salted water and cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 4-5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

      Add Mushrooms and Spinach: Add the sliced mushrooms to the skillet and cook until they release their juices and become tender, about 5-7 minutes. Stir in the fresh spinach and let it wilt. Season with oregano, thyme, salt, and pepper. If desired, add red pepper flakes for a bit of heat.

        Mix Cheeses: In a large mixing bowl, combine the ricotta cheese, half of the mozzarella cheese (1/2 cup), and all of the grated Parmesan cheese. Mix until smooth.
