1 pre-made pie crust (store-bought or homemade)

2 cups fresh spinach, chopped

1 cup mushrooms, sliced (white or cremini)

1 small onion, diced

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

4 large eggs

1 cup heavy cream (or half-and-half)

1/2 tsp garlic powder

1/2 tsp nutmeg

Salt and pepper to taste

2 tbsp olive oil or butter (for sautéing)

Instructions
 

Preheat the oven to 375°F (190°C).

    Prepare the pie crust: Place the pre-made pie crust into a 9-inch pie dish and press it down gently. Prick the bottom with a fork to prevent bubbling and set aside.

      Sauté vegetables: In a skillet, heat the olive oil or butter over medium heat. Add the diced onion and sauté for about 3-4 minutes until it becomes translucent. Then add the sliced mushrooms and cook for an additional 5 minutes until they’re golden brown. Finally, stir in the chopped spinach and cook until wilted (about 2 minutes). Remove from heat and let cool slightly.

        Mix the cheese and eggs: In a mixing bowl, whisk together the eggs, heavy cream, garlic powder, nutmeg, salt, and pepper until well combined.

          Combine ingredients: Stir the sautéed vegetables into the egg mixture along with the shredded mozzarella and grated Parmesan. Mix until evenly distributed.

            Fill the crust: Pour the mixture into the prepared pie crust, spreading it out evenly.

              Bake: Place the quiche in the preheated oven and bake for about 35-40 minutes, or until the filling is set and the top is slightly golden.
