Cheesy Spinach Stuffed Shells

20 jumbo pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1 egg, beaten

2 cloves garlic, minced

1 teaspoon onion powder

1/2 teaspoon Italian seasoning

Salt and pepper to taste

3 cups marinara sauce

Fresh basil for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the jumbo pasta shells and cook according to package directions until al dente. Drain and set aside to cool slightly.

      Prepare the Filling: In a large mixing bowl, combine the chopped spinach, ricotta cheese, half of the mozzarella, Parmesan cheese, beaten egg, minced garlic, onion powder, Italian seasoning, salt, and pepper. Mix well until all ingredients are combined.

        Stuff the Shells: Take each cooked shell and carefully stuff it with the spinach and cheese mixture. Place the stuffed shells seam-side up in a large baking dish.

          Add the Sauce: Pour the marinara sauce evenly over the stuffed shells, covering them completely. Sprinkle the remaining mozzarella cheese on top.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.

              Garnish and Serve: Once baked, allow the dishes to cool for a few minutes. Garnish with fresh basil leaves if desired before serving.
