Cheesy Spinach Stuffed Tortilla Melts

4 large flour tortillas

1 cup fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 tablespoons olive oil

Sour cream or salsa, for serving (optional)

Instructions
 

Preheat the Pan: Heat a large skillet over medium heat and add 1 tablespoon of olive oil, swirling to coat the bottom.

    Mix the Filling: In a large mixing bowl, combine the chopped spinach, ricotta cheese, mozzarella cheese, grated Parmesan cheese, garlic powder, onion powder, red pepper flakes, salt, and pepper. Mix until well incorporated.

      Assemble the Tortillas: Place a large tortilla on a clean surface. Spoon about a quarter of the spinach and cheese mixture onto one half of the tortilla. Fold the other half over the filling to create a semi-circle. Press gently to seal. Repeat with the remaining tortillas.

        Cook the Melts: Carefully place the stuffed tortilla in the preheated skillet. Brush the top of the tortilla with a little olive oil. Cook for about 3-4 minutes or until golden brown. Flip the tortilla and cook the other side until it’s also golden and the cheese has melted, about another 3-4 minutes.

          Serve: Remove the tortilla melts from the skillet and let them cool slightly. Slice into wedges and serve warm with sour cream or salsa on the side for dipping.
