2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/4 teaspoon nutmeg

2 cups all-purpose flour

1 tablespoon baking powder

1 tablespoon sugar

1/2 teaspoon salt (for the waffle batter)

2 tablespoons melted butter

2 large eggs

1 3/4 cups milk

Cooking spray or additional butter for the waffle iron

Prepare the Filling: In a large mixing bowl, combine the chopped spinach, ricotta cheese, mozzarella cheese, Parmesan cheese, garlic powder, nutmeg, salt, and pepper. Mix until well blended, then set aside.

    Make the Waffle Batter: In another bowl, whisk together the flour, baking powder, sugar, and salt. In a separate bowl, whisk together the melted butter, eggs, and milk. Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be slightly lumpy; do not overmix.
