6 large eggs

1 cup diced ham

1 cup spinach, chopped

1/2 cup bell pepper, diced (any color)

1/2 cup onion, chopped

1 cup cherry tomatoes, halved

1 cup shredded cheese (cheddar, mozzarella, or a blend)

1/4 cup milk

2 tbsp olive oil

Salt and pepper to taste

Fresh herbs (like parsley or chives) for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté Vegetables: In a large, oven-safe skillet, heat the olive oil over medium heat. Add the chopped onion and diced bell pepper. Sauté for about 3-4 minutes until they are soft.

      Add Spinach and Tomatoes: Stir in the chopped spinach and halved cherry tomatoes. Cook for another 2-3 minutes until the spinach is wilted.

        Prepare Egg Mixture: In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined. Add the diced ham and half of the shredded cheese, mixing gently to combine.

          Combine and Cook: Pour the egg mixture into the skillet over the sautéed vegetables. Stir gently to ensure even distribution of ingredients. Allow it to cook on the stovetop for about 2-3 minutes, until the edges start to set.
