Cheesy Vegetable Quesadillas with Salsa

4 whole wheat tortillas

1 cup shredded Mexican blend cheese (or cheese of your choice)

1 cup bell peppers (red, yellow, and green), diced

1 cup zucchini, diced

1 cup corn kernels (fresh or frozen)

1/2 cup red onion, finely chopped

1 teaspoon ground cumin

1 teaspoon chili powder

1 tablespoon olive oil

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

1 avocado, sliced (for serving)

1 cup salsa (store-bought or homemade)

Instructions
 

Prep the Vegetables: In a large bowl, mix the diced bell peppers, zucchini, corn, and red onion. Season the mixture with cumin, chili powder, salt, and pepper. Stir well to combine.

    Sauté the Vegetables: In a large skillet over medium heat, add olive oil. Once hot, add the vegetable mixture. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are tender and slightly caramelized. Remove from heat and set aside.

      Assemble the Quesadillas: On half of each tortilla, spread a generous layer of the sautéed vegetable mixture, then sprinkle shredded cheese over the vegetables. Fold the tortillas in half to cover the filling.

        Cook the Quesadillas: In the same skillet (or use a clean one), place the folded quesadillas over medium heat. Cook for 3-4 minutes on each side, or until golden brown and crispy. The cheese should be melted and gooey.

          Slice and Serve: Once cooked, remove the quesadillas from the skillet and let them cool for a minute. Cut each quesadilla into wedges and serve hot, garnished with fresh cilantro and slices of avocado. Don’t forget the salsa on the side for dipping!
