2 medium zucchinis, grated

4 strips of cooked bacon, chopped

1 cup shredded cheddar cheese

1/2 cup all-purpose flour

1/4 cup grated Parmesan cheese

2 large eggs

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon baking powder

Salt and pepper to taste

1/4 cup chopped fresh chives (optional)

Olive oil for frying

Instructions
 

Prep the Zucchini: Place the grated zucchini in a clean kitchen towel or cheesecloth. Squeeze out excess moisture to avoid soggy fritters.

    Mix Ingredients: In a large mixing bowl, combine the drained zucchini, chopped bacon, cheddar cheese, Parmesan cheese, flour, eggs, garlic powder, onion powder, baking powder, chives (if using), and season with salt and pepper. Stir until well combined.

      Shape the Fritters: Heat a skillet over medium heat and add a couple of tablespoons of olive oil. Using a spoon, scoop out the mixture and form small patties (about 2-3 inches wide).

        Fry the Fritters: Place the patties into the hot skillet, cooking in batches to avoid overcrowding. Fry until golden brown and crispy, about 3-4 minutes per side. Add more olive oil as needed.

          Drain & Serve: Once cooked, transfer the fritters to a plate lined with paper towels to absorb any excess oil. Serve warm with sour cream, Greek yogurt, or your favorite dipping sauce.
