Cherry Coconut Cream Bars

1 cup graham cracker crumbs

1/2 cup unsweetened shredded coconut

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

For the filling:

1 can (14 oz) sweetened condensed milk

1/2 cup coconut cream

1/4 cup fresh lime juice

1/4 teaspoon salt

1 teaspoon vanilla extract

1 cup fresh cherries, pitted and halved

For the topping:

1 cup unsweetened shredded coconut, toasted

Fresh cherries for garnish (optional)

Mint leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking pan and line it with parchment paper, leaving an overhang for easy removal later.

    Make the Crust: In a large bowl, combine the graham cracker crumbs, shredded coconut, granulated sugar, and melted butter. Mix until everything is evenly combined and resembles wet sand. Press this mixture firmly into the bottom of the prepared baking pan to form an even layer.

      Bake the Crust: Bake the crust in the preheated oven for about 10-12 minutes, or until lightly golden. Remove from the oven and set aside to cool slightly.

        Prepare the Filling: In a medium bowl, whisk together the sweetened condensed milk, coconut cream, lime juice, salt, and vanilla extract until smooth and well combined.

          Add the Cherries: Gently fold in the fresh cherries until they are evenly distributed in the filling mixture.

            Combine and Bake: Pour the cherry mixture over the cooled crust, spreading it out evenly. Bake for 25-30 minutes until the filling is set and slightly jiggles in the middle.

              Cool Down: Allow the bars to cool completely in the baking pan at room temperature. Once cooled, refrigerate for at least 2 hours to set further.

                Prepare the Topping: While the bars are chilling, toast the unsweetened shredded coconut in a dry skillet over medium heat, stirring frequently until golden brown. Set aside to cool.

                  Serve: Once the bars are thoroughly chilled, lift them out of the baking pan using the parchment overhang. Cut into squares or bars, sprinkle the toasted coconut on top, and garnish with additional fresh cherries and mint leaves if desired.
