1 ½ cups grated zucchini (about 1 medium zucchini)

2 large eggs

½ cup vegetable oil (or melted coconut oil)

½ cup unsweetened applesauce

¾ cup brown sugar, packed

¾ cup granulated sugar

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

½ teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

1 cup semisweet chocolate chips

Optional: ½ cup chopped nuts (walnuts or pecans)

Prepare the Zucchini: Grate the zucchini using a box grater or food processor. Place the grated zucchini into a clean kitchen towel and squeeze out excess moisture. Set aside.

    Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.

      Mix Wet Ingredients: In a large mixing bowl, whisk together the eggs, vegetable oil, applesauce, brown sugar, granulated sugar, and vanilla extract until well combined and smooth.

        Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.

          Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix; it's okay if the batter is a little lumpy.
