Chicken Hashbrown Casserole

2 cups cooked chicken, shredded or diced

1 (30 oz) bag frozen hashbrowns, thawed

1 cup shredded cheddar cheese (plus extra for topping)

1 cup sour cream

1 can (10.5 oz) cream of chicken soup

1 cup chopped green onions (divided)

1/2 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup crushed cornflakes (optional for topping)

2 tablespoons butter, melted (for cornflakes topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Casserole Base: In a large mixing bowl, combine the cooked chicken, thawed hashbrowns, cheddar cheese, sour cream, cream of chicken soup, half of the chopped green onions, milk, garlic powder, onion powder, salt, and pepper. Mix everything until well combined.

      Transfer to Baking Dish: Grease a 9x13 inch baking dish with cooking spray or butter. Pour the chicken and hashbrown mixture into the dish, spreading it evenly to ensure it cooks uniformly.

        Prepare Topping: If using cornflakes, mix the crushed cornflakes with the melted butter in a small bowl. This will give a crunchy topping.

          Add Toppings: Evenly sprinkle the remaining shredded cheddar cheese over the casserole. Then, if using, top with the buttery cornflakes mixture for added crunch.

            Bake: Place the casserole in the preheated oven and bake for 45-55 minutes, or until the top is golden brown and bubbly.

              Garnish and Serve: Once baked, remove the casserole from the oven and let it cool for about 10 minutes. Garnish with the remaining chopped green onions before serving. Enjoy!
