Chicken Skewers with Peach Salsa

For the Chicken Skewers:

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

2 tablespoons olive oil

1 tablespoon soy sauce

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

Salt and pepper, to taste

Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes)

For the Peach Salsa:

2 ripe peaches, diced

1/2 small red onion, finely chopped

1 jalapeño, seeds removed and minced (or to taste)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper, to taste

Marinate the Chicken:

    In a bowl, combine the olive oil, soy sauce, honey, minced garlic, smoked paprika, ground cumin, salt, and pepper. Add the chicken cubes and toss until well coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more intense flavor.

      Prepare the Peach Salsa:

        In a separate bowl, combine the diced peaches, red onion, minced jalapeño, and chopped cilantro. Squeeze lime juice over the mixture and season with salt and pepper. Gently stir to combine and let sit to allow the flavors to meld while you prepare the skewers.

          Assemble the Skewers:

            Preheat your grill to medium-high heat. Thread the marinated chicken cubes onto the skewers, ensuring they are packed tightly but not overcrowded. This will help with even cooking.

              Grill the Skewers:

                Place the skewers on the preheated grill and cook for about 12-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (74°C).
