Chili Cheese Veggie Fries

Ingredients
  

4 large russet potatoes, cut into fries

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

Salt and pepper, to taste

1 can (15 oz) kidney beans, rinsed and drained

1 cup canned diced tomatoes, drained

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 cup shredded cheddar cheese (or vegan cheese for a plant-based option)

1/4 cup fresh cilantro, chopped (for garnish)

1 avocado, diced (for topping)

Instructions
 

Prepare the Fries:

    - Preheat your oven to 425°F (220°C).

      - In a large bowl, toss the cut fries with olive oil, paprika, garlic powder, salt, and pepper until well-coated.

        - Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway, until golden and crispy.

          Make the Chili:

            - In a medium-sized saucepan, heat a splash of olive oil over medium heat.

              - Add the chopped onion and sauté for 3-4 minutes until it turns translucent.

                - Stir in the minced garlic and sauté for another minute.

                  - Add the kidney beans, diced tomatoes, chili powder, cumin, and a pinch of salt and pepper. Let the mixture simmer for about 10-15 minutes, allowing the flavors to meld together.

                    Assemble:

                      - Once the fries are done, remove them from the oven and layer them on a serving platter.

                        - Spoon the chili mixture generously over the hot fries, ensuring they are well-covered.

                          - Sprinkle the shredded cheese over the top and return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.

                            Garnish and Serve:

                              - Remove from the oven, and top with chopped cilantro and diced avocado.

                                - Serve immediately while hot and gooey!
