Watermelon is undeniably one of the most versatile ingredients one can use in summer salads. Not only is it hydrating—comprising about 92% water—but it also provides a range of vitamins and nutrients that benefit overall health. Watermelon is rich in vitamins A and C, both crucial for maintaining skin health and boosting the immune system. Additionally, it contains antioxidants like lycopene, which has been linked to heart health and reducing inflammation.

Ingredients

4 cups watermelon, diced into bite-sized cubes

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 jalapeño, seeded and minced (adjust for spice preference)

Juice of 2 limes

Zest of 1 lime

1/4 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon honey (or agave for a vegan option)

Crumbled feta cheese (optional, for garnish)

Extra lime wedges for serving

Instructions

Prepare the Watermelon: Start by cutting the watermelon into cubes and place them in a large mixing bowl. Ensure that the pieces are evenly sized for consistent flavor in every bite.

Chop the Vegetables: Dice the cucumber and finely chop the red onion. If you prefer a milder flavor, soak the chopped red onion in cold water for about 10 minutes, then drain before adding it to the salad.

Add Fresh Ingredients: Add the diced cucumber, red onion, and chopped cilantro to the bowl with the watermelon.

Mix the Spices: In a small bowl, combine the minced jalapeño, lime juice, lime zest, salt, black pepper, and honey. Whisk well to ensure all ingredients are mixed thoroughly.

Combine Everything: Pour the lime dressing over the watermelon mixture. Carefully toss the salad with two large spoons or spatulas until everything is well-coated in the dressing.

Chill: Allow the salad to sit for at least 15 minutes to let the flavors meld together. For best taste, refrigerate for up to an hour before serving.

Serve: Serve the salad chilled, garnished with crumbled feta cheese (if using) and extra lime wedges on the side for added zest.
