4 large whole wheat tortillas

1 cup cooked quinoa

1 can (15 oz) black beans, rinsed and drained

1 ripe mango, diced

1 red bell pepper, diced

1 avocado, sliced

1 cup shredded lettuce

1/2 cup sharp cheddar cheese, shredded

1/2 cup crunchy tortilla strips

1/4 cup fresh cilantro, chopped

2 tablespoons lime juice

1 tablespoon chili powder

1 teaspoon cumin

Salt and pepper to taste

Optional: hot sauce for an extra kick

Prepare the Filling: In a large mixing bowl, combine the cooked quinoa, black beans, diced mango, red bell pepper, cilantro, lime juice, chili powder, cumin, salt, and pepper. Mix well until all ingredients are evenly distributed.

    Assemble the Wraps: Lay out a whole wheat tortilla on a clean surface. In the center of the tortilla, layer a handful of shredded lettuce, a scoop of the quinoa and black bean mixture, a few slices of avocado, and a sprinkle of cheddar cheese.
