1 cup couscous

1 1/4 cups boiling vegetable broth

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup kalamata olives, pitted and halved

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon lemon zest

Salt and pepper to taste

Prepare the Couscous: In a medium-sized bowl, pour the boiling vegetable broth over the couscous. Cover with a lid or plastic wrap and let it stand for about 5 minutes until all the liquid is absorbed. Fluff with a fork to separate the grains and allow it to cool completely.

    Chop the Vegetables: While the couscous is cooling, prepare the vegetables. Halve the cherry tomatoes, dice the cucumber, and finely chop the red onion.

      Combine Ingredients: In a large mixing bowl, combine the cooled couscous, cherry tomatoes, cucumber, red onion, kalamata olives, feta cheese, parsley, and mint.

        Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, lemon zest, salt, and pepper. Adjust seasoning according to your taste.

          Dress the Salad: Pour the dressing over the couscous mixture and toss gently until everything is well coated.

            Chill: Cover the salad with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
