One of the critical steps in ensuring your Choco-Banana Bliss Muffins come out perfectly fluffy and tender is to avoid overmixing the batter. Overmixing can lead to a denser texture, ruining the light and airy quality that we desire in muffins. When you combine wet and dry ingredients, gluten develops in the flour, which is essential for structure but can become problematic if overworked.

Ingredients

2 ripe bananas, mashed

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1/3 cup vegetable oil

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking soda

1/4 teaspoon salt

1 cup all-purpose flour

1/2 cup mini chocolate chips

1/4 cup chopped walnuts (optional)

Sliced bananas and whipped cream for topping (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or spray with cooking oil.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, granulated sugar, brown sugar, oil, egg, and vanilla extract. Whisk until well blended.

Combine Dry Ingredients: In a separate bowl, whisk together the baking soda, salt, and flour. Gradually stir the dry ingredients into the wet ingredients until just combined. Be careful not to overmix.

Fold in Add-Ins: Gently fold in the mini chocolate chips and chopped walnuts (if using).

Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cavity about two-thirds full.

Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Cool: Once baked, remove the muffins from the oven and allow them to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.

Serve: For an extra indulgent treat, serve warm with a slice of banana and a dollop of whipped cream on top.
