1 cup semi-sweet chocolate chips

½ cup (1 stick) unsalted butter

½ cup creamy peanut butter

1 cup powdered sugar

2 large eggs

2 large egg yolks

1 teaspoon vanilla extract

½ cup all-purpose flour

1 pinch of salt

Cooking spray or additional butter for greasing ramekins

Optional: Ice cream or whipped cream for serving

Instructions
 

Preheat & Prep Ramekins: Preheat your oven to 425°F (220°C). Grease four 6-ounce ramekins with cooking spray or butter, and place them on a baking sheet for easy handling.

    Melt Chocolate & Butter: In a medium saucepan over low heat, combine the semi-sweet chocolate chips and unsalted butter. Stir continuously until melted and smooth. Remove from heat and let it cool slightly.

      Combine Peanut Butter: Add the creamy peanut butter to the melted chocolate mixture, stirring until fully combined and smooth.

        Whisk Wet Ingredients: In a separate bowl, whisk together the eggs, egg yolks, and vanilla extract until well blended. Gradually add the mixture into the warm chocolate-peanut butter mix, stirring gently to combine.

          Add Dry Ingredients: Sift the powdered sugar and flour into the chocolate mixture, along with a pinch of salt. Gently fold until just combined; be sure not to over mix.

            Fill Ramekins: Pour the batter evenly into each prepared ramekin, filling them about ¾ full to allow room for the lava effect. If desired, you can place a few chocolate chips or a spoonful of peanut butter in the center of each ramekin for an extra gooey center.

              Bake: Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft and jiggly.

                Cool & Serve: Allow the cakes to cool for 1 minute before carefully running a knife around the edges to loosen. Invert each ramekin onto a plate and gently lift off to reveal the lava cake. Serve immediately, preferably with a scoop of ice cream or a dollop of whipped cream on top.
