Ingredients

2 cups all-purpose flour

1 cup granulated sugar

1 tbsp baking powder

1 tsp baking soda

1 tsp ground cinnamon

½ tsp salt

2 large eggs

½ cup unsweetened applesauce

½ cup milk (whole or almond)

⅓ cup vegetable oil

1 tsp vanilla extract

1 ½ cups peeled and diced apples (about 2 medium apples)

½ cup chopped walnuts or pecans (optional)

1 tbsp brown sugar (for topping)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease with cooking spray.

Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, ground cinnamon, and salt until well combined.

Combine Wet Ingredients: In a separate bowl, whisk together the eggs, applesauce, milk, vegetable oil, and vanilla extract until smooth.

Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir gently with a spatula. Do not overmix! Fold in the diced apples and nuts (if using), being careful not to crush the apples.

Fill Muffin Cups: Spoon the batter into the prepared muffin cups, filling each about ¾ full.

Add Topping: Sprinkle brown sugar over the tops of the muffins for a sweet crunch.

Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Cool Down: Once baked, remove the muffins from the oven and allow them to cool in the pan for about 5 minutes before transferring to a wire rack to cool completely.

Enjoy: Serve warm, and enjoy these delightful Cinnamon Apple Breakfast Muffins with butter or your favorite jam!
