To achieve the perfect Cinnamon Apple Tarte Tatin, the key is in how you incorporate the warming flavors of cinnamon and vanilla into the dish. Begin by selecting high-quality ground cinnamon; not all cinnamon is created equal. Ceylon cinnamon offers a sweeter, more delicate flavor compared to the more common Cassia cinnamon.

Ingredients

4 large Granny Smith apples, peeled, cored, and quartered

1/2 cup unsalted butter (1 stick)

1 cup granulated sugar

1 teaspoon ground cinnamon

1 teaspoon vanilla extract

1 sheet of puff pastry, thawed (or homemade if preferred)

Pinch of salt

Optional: whipped cream or vanilla ice cream for serving

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Caramel: In a large, heavy oven-proof skillet (preferably cast iron), melt the butter over medium heat. Once melted, add the sugar and stir continuously until the mixture turns a golden amber color, approximately 5-7 minutes. Be careful not to let it burn.

Add Flavors: Stir in the ground cinnamon, vanilla extract, and a pinch of salt. Mix well to combine.

Arrange the Apples: Carefully arrange the quartered apples cut side down in the caramel sauce. Pack them tightly, as they will shrink while cooking. Cook for about 10-15 minutes over medium heat until the apples are slightly softened and start to release their juices.

Top with Puff Pastry: Roll out the thawed puff pastry on a floured surface to smooth it out. Cut a circle slightly larger than the skillet (about 10 inches in diameter). Carefully place the puff pastry over the apples, tucking the edges inside the skillet around the apples.

Bake the Tarte Tatin: Place the skillet in the preheated oven and bake for 25-30 minutes or until the pastry is golden brown and puffed.

Cool and Invert: Once baked, let the tart cool for about 5-10 minutes. To serve, carefully invert the skillet onto a large round serving platter. If any apples stick to the skillet, gently reposition them back onto the tart.

Serve: Slice the Cinnamon Apple Tarte Tatin warm, and serve it with a dollop of whipped cream or a scoop of vanilla ice cream for an extra indulgent treat!
