Ingredients

2 cups rolled oats

1/2 cup brown sugar, packed

1 teaspoon ground cinnamon

1/2 teaspoon salt

1 teaspoon baking powder

2 cups almond milk (or milk of choice)

2 large eggs

1 teaspoon vanilla extract

1/2 cup applesauce (unsweetened)

1 cup raisins

1/2 cup chopped walnuts (optional)

Extra cinnamon for sprinkling on top

Instructions

Preheat & Prep: Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking dish or an 8x8 inch dish with cooking spray or butter.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, brown sugar, ground cinnamon, salt, and baking powder. Mix well to ensure everything is evenly incorporated.

Whisk Wet Ingredients: In a separate bowl, whisk together the almond milk, eggs, vanilla extract, and applesauce until well combined.

Combine Mixtures: Pour the wet mixture into the dry mixture, stirring until everything is evenly mixed. Gently fold in the raisins and chopped walnuts if using.

Transfer to Baking Dish: Pour the oatmeal mixture into the prepared baking dish, spreading it out evenly.

Add Toppings: Sprinkle a little extra ground cinnamon on top for flavor and aroma.

Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes or until the edges are golden and the center is set. You can test for doneness by inserting a knife in the center—it should come out clean.

Cool & Serve: Once baked, remove it from the oven and let it cool for about 5 minutes. Cut into squares and serve warm. You can top it with a drizzle of maple syrup, a dollop of yogurt, or fresh fruit for added deliciousness.
