Classic Cheddar & Broccoli Quinoa Casserole

1 cup quinoa, rinsed

2 cups vegetable broth

2 cups fresh broccoli florets

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 cup shredded sharp cheddar cheese

1 cup milk (or plant-based milk)

2 large eggs

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

1 cup breadcrumbs (optional, for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.

    Cook the Quinoa: In a medium saucepan, bring the vegetable broth to a boil. Add the rinsed quinoa, reduce heat to low, cover, and let it simmer for about 15 minutes or until the quinoa has absorbed all the liquid. Remove from heat and set aside.

      Sauté the Vegetables: In a skillet over medium heat, add olive oil. Once hot, sauté the diced onion until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant. Stir in the broccoli florets and cook until bright green and tender, about 3-4 minutes. Remove from heat.

        Mix the Casserole Base: In a large mixing bowl, combine the cooked quinoa, sautéed onion and broccoli mixture, shredded cheddar cheese, milk, eggs, dried thyme, paprika, salt, and pepper. Stir well until all ingredients are fully incorporated.

          Transfer to Baking Dish: Pour the mixture into the prepared baking dish, spreading it evenly.

            Add Topping (optional): If desired, sprinkle breadcrumbs evenly over the top of the casserole for a crispy texture.

              Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the casserole is set and the top is golden and bubbly.
