Ingredients

For the Chicken and Broth:

1 lb boneless, skinless chicken thighs, diced

4 cups low-sodium chicken broth

1 medium onion, chopped

2 cloves garlic, minced

2 medium carrots, diced

2 stalks celery, diced

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper, to taste

2 tablespoons olive oil

1 tablespoon Worcestershire sauce

For the Dumplings:

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup milk

2 tablespoons unsalted butter, melted

1 tablespoon fresh parsley, chopped (for garnish)

Instructions

Sauté the Chicken: In a large pot, heat olive oil over medium heat. Add the diced chicken thighs and cook until browned, about 5 minutes. Season with salt and pepper. Remove chicken and set aside.

Cook the Vegetables: In the same pot, add chopped onion, garlic, carrots, and celery. Sauté for about 3-4 minutes until they start to soften. Stir in thyme and rosemary.

Make the Broth: Return the chicken to the pot. Pour in the chicken broth and Worcestershire sauce. Bring to a gentle boil, then reduce to a simmer for about 10 minutes.

Prepare the Dumplings: While the soup simmers, in a bowl, whisk together the flour, baking powder, and salt. Stir in milk and melted butter until just combined (do not over-mix).

Cook the Dumplings: Drop spoonfuls of the dumpling batter onto the surface of the simmering broth. Cover the pot with a lid and cook for an additional 10 minutes. Do not lift the lid during this time to ensure fluffy dumplings!

Season and Serve: After 10 minutes, check dumplings for doneness (they should be fluffy and cooked through). Taste and adjust seasoning with salt and pepper. Ladle the chicken and dumplings into bowls, garnish with fresh parsley, and enjoy!
