1 cup Arborio rice

4 cups vegetable or chicken broth

1 cup fresh mushrooms (cremini or button), sliced

1/2 cup onion, finely chopped

2 cloves garlic, minced

1/2 cup dry white wine (optional)

1/2 cup grated Parmesan cheese (plus extra for garnish)

2 tablespoons olive oil

2 tablespoons unsalted butter

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Broth: In a medium saucepan, heat the broth over low heat. Keep it warm throughout the cooking process.

    Sauté Vegetables: In a large skillet, heat olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and garlic, sautéing until they are translucent (about 2-3 minutes).

      Cook Mushrooms: Add the sliced mushrooms to the skillet. Sauté until they are browned and have released their moisture, about 5 minutes. Season with a pinch of salt and black pepper.

        Toast the Rice: Push the vegetables to one side of the pan, adding the Arborio rice to the empty space. Toast the rice for about 1-2 minutes until the edges appear translucent, stirring gently to coat it in the oil.

          Deglaze with Wine: If using the white wine, pour it in now. Stir continuously until the wine is mostly absorbed by the rice.

            Add Broth Gradually: Begin adding the warm broth one ladleful at a time, stirring frequently. Wait until the liquid is mostly absorbed before adding the next ladle. This process should take about 18-20 minutes, during which the rice will release its starch, creating a creamy consistency.

              Finish with Cheese: Once the rice is cooked al dente and has absorbed most of the broth, stir in the remaining tablespoon of butter and the grated Parmesan cheese. Mix until creamy. Taste and adjust seasoning if necessary.

                Serve: Spoon the creamy mushroom risotto into bowls. Garnish with extra Parmesan cheese and chopped parsley.
