Classic Meatloaf with Mashed Potatoes

For the Meatloaf:

1 lb ground beef (80/20 for flavor)

1/2 lb ground pork (for moisture)

1 cup breadcrumbs (seasoned or plain)

1 small onion, finely chopped

2 cloves garlic, minced

1 egg, beaten

1/2 cup milk

1 tsp Worcestershire sauce

1 tsp salt

1/2 tsp black pepper

1 tsp dried thyme

1 tsp dried parsley

1/4 cup ketchup (plus more for glaze)

For the Mashed Potatoes:

2 lbs russet potatoes, peeled and cut into chunks

1/2 cup butter (unsalted, plus more for serving)

1/2 cup milk (or heavy cream for richness)

Salt and pepper to taste

Fresh chives, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Meatloaf Mixture: In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, chopped onion, minced garlic, beaten egg, milk, Worcestershire sauce, salt, black pepper, thyme, parsley, and 1/4 cup ketchup. Mix until everything is well incorporated, but do not overmix.

      Shape the Meatloaf: Transfer the meat mixture to a lightly greased loaf pan or shape it by hand into a loaf on a baking sheet lined with parchment paper. Brush the top with extra ketchup for a nice glaze.

        Bake the Meatloaf: Place the meatloaf in the preheated oven and bake for 1 hour, or until the internal temperature reaches 160°F (70°C). Allow it to rest for 10 minutes before slicing.

          Cook the Mashed Potatoes: While the meatloaf is baking, bring a large pot of salted water to a boil. Add the potato chunks and cook until tender, about 15-20 minutes.

            Mash the Potatoes: Drain the potatoes and return them to the pot. Add the butter and milk (or heavy cream) and mash until smooth and creamy. Season with salt and pepper to taste.

              Serve: Slice the meatloaf and serve alongside a generous portion of mashed potatoes. Garnish the potatoes with fresh chives and melt additional butter on top if desired.
