Ingredients

1 pound boneless, skinless chicken thighs, cut into 1-inch pieces

1 cup coconut milk

Zest and juice of 2 limes

2 tablespoons soy sauce

2 tablespoons brown sugar

1 teaspoon garlic powder

1 teaspoon ginger powder

1 teaspoon chili powder (adjust to taste)

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Skewers (soaked in water if wooden)

Instructions

Marinate the Chicken:

    - In a large bowl, combine coconut milk, lime zest, lime juice, soy sauce, brown sugar, garlic powder, ginger powder, chili powder, salt, and pepper. Mix well to create a marinade.

      - Add the chicken pieces to the marinade, ensuring they are well-coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour (up to 4 hours for more flavor).

        Prepare the Skewers:

          - If you are using wooden skewers, soak them in water for about 30 minutes to prevent burning during grilling.

            - Preheat your grill or grill pan to medium-high heat.

              Assemble the Skewers:

                - Thread the marinated chicken pieces onto the skewers, leaving a small gap between each piece to ensure even cooking.

                  Grill the Skewers:

                    - Place the skewers on the preheated grill. Cook for about 5-7 minutes on each side, or until the chicken is fully cooked and has nice grill marks. The internal temperature should reach 165°F (75°C).

                      Serve:

                        - Remove from the grill and let rest for a minute. Garnish with chopped cilantro and serve with lime wedges on the side.

                          Enjoy:

                            - These Coconut Lime Chicken Skewers are perfect served alongside a fresh salad, coconut rice, or grilled vegetables!
