Cold Chickpea Avocado Salad Wraps

Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

1 ripe avocado, diced

1 small cucumber, diced

1 cup cherry tomatoes, halved

1/4 red onion, finely chopped

1/4 cup fresh parsley, chopped

2 tbsp fresh lemon juice

2 tbsp olive oil

1 tsp garlic powder

Salt and pepper, to taste

4 large lettuce leaves (e.g., romaine or butter lettuce)

Optional: crushed red pepper flakes, for heat

Instructions
 

In a large mixing bowl, combine the drained chickpeas, diced avocado, cucumber, cherry tomatoes, red onion, and parsley.

    In a separate small bowl, whisk together the lemon juice, olive oil, garlic powder, salt, and pepper.

      Pour the dressing over the chickpea mixture and gently toss until everything is well combined. Be careful not to mash the avocado too much.

        If desired, add crushed red pepper flakes for a bit of heat and mix lightly.

          Lay out the large lettuce leaves on a clean surface or plate.

            Spoon a generous amount of the chickpea and avocado mixture into the center of each lettuce leaf.

              Roll the lettuce leaves up tightly but gently, beginning at the base of the leaf and rolling upwards to form wraps.

                Serve immediately or refrigerate for 15-20 minutes to chill and allow flavors to meld.
