Cold Cucumber & Dill Sandwiches

Ingredients
  

2 large cucumbers, thinly sliced

8 oz cream cheese, softened

1/4 cup sour cream

2 tbsp fresh dill, chopped (plus extra for garnish)

1 tbsp lemon juice

1 tsp garlic powder

Salt and pepper to taste

8 slices of whole-grain or rye bread

Optional: lettuce leaves for added crunch

Instructions
 

Prepare the Spread: In a medium mixing bowl, combine the softened cream cheese, sour cream, chopped dill, lemon juice, garlic powder, salt, and pepper. Mix until smooth and well incorporated.

    Assemble the Sandwiches: Lay out the bread slices on a clean surface. If using, place a lettuce leaf on four of the bread slices for added flavor and crunch.

      Spread the Mixture: Generously spread the cream cheese mixture on top of each of the prepared bread slices, including the lettuce layer where applicable.

        Add the Cucumbers: Evenly distribute the sliced cucumbers over the cream cheese spread on each sandwich. For a beautiful presentation, slightly overlap the cucumber slices.

          Top It Off: Place the remaining slices of bread on top of the cucumber-covered slices to complete each sandwich. Gently press down to secure the layers.

            Cut & Serve: Trim off the crusts for a classic tea sandwich look, and slice each sandwich into quarters or halves, depending on your preference. Garnish with additional dill if desired.

              Chill (optional): For a more refreshing experience, cover the sandwiches with plastic wrap and refrigerate for 30 minutes before serving.
