12 ounces of your favorite pasta (farfalle, fusilli, or penne work great)

1 cup fresh basil leaves, packed

1/2 cup grated Parmesan cheese

1/3 cup pine nuts (or walnuts for a budget-friendly option)

2 cloves garlic, minced

1/2 cup extra virgin olive oil

Salt and pepper to taste

1 pint cherry tomatoes, halved

1 cup arugula or baby spinach (optional)

Zest and juice of 1 lemon

Fresh basil leaves for garnish

Additional Parmesan for serving

Instructions
 

Cook the Pasta:

    - Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain and rinse under cold water to stop the cooking process. Drain well and set aside.

      Prepare the Pesto:

        - In a food processor, combine the basil leaves, Parmesan cheese, pine nuts, minced garlic, lemon zest, and a pinch of salt and pepper. Pulse until well mixed.

            Combine Pasta and Pesto:
