Cold Sesame Chicken Noodles

For the Noodles:

8 oz. dried soba or rice noodles

1 tbsp sesame oil

1 tbsp vegetable oil

For the Chicken:

1 lb boneless, skinless chicken breasts

1/4 cup soy sauce

2 cloves garlic, minced

1-inch piece of ginger, grated

1 tbsp honey or maple syrup

1 tsp rice vinegar

Salt and pepper to taste

For the Dressing:

1/4 cup tahini

2 tbsp soy sauce

2 tbsp rice vinegar

2 tbsp sesame oil

1 tbsp honey or maple syrup

1/2 tsp red pepper flakes (adjust to taste)

1-2 tbsp water (to reach desired consistency)

Toppings:

2 green onions, sliced

1/4 cup chopped cilantro

2 tbsp sesame seeds (toasted)

1/2 cucumber, julienned

1 carrot, grated

Instructions
 

Cook the Noodles: Bring a large pot of salted water to a boil. Add the soba or rice noodles and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking. Toss with sesame oil and vegetable oil to prevent sticking, then set aside.

    Prepare the Chicken: In a mixing bowl, combine soy sauce, minced garlic, grated ginger, honey, rice vinegar, salt, and pepper. Add the chicken breasts and marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).

      Cook the Chicken: Heat a grill pan or skillet over medium heat. Cook the marinated chicken for about 5-7 minutes on each side, or until fully cooked and no longer pink in the center. Remove from heat and let it rest for 5 minutes before slicing into thin strips.

        Make the Dressing: In a small bowl, whisk together tahini, soy sauce, rice vinegar, sesame oil, honey, red pepper flakes, and water until smooth and creamy. Adjust water as needed to achieve your desired dressing consistency.
