Corn Salad with Lime Dressing

4 cups fresh corn kernels (about 6 ears of corn)

1 cup cherry tomatoes, halved

1/2 cup red bell pepper, diced

1/2 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 avocado, diced

1 lime, juiced (about 2 tablespoons)

1 tablespoon olive oil

1 teaspoon honey or agave syrup

Salt and pepper, to taste

Optional: 1 small jalapeño, diced (for heat)

Instructions
 

Prepare the Corn: If using fresh corn, bring a large pot of water to a boil. Add the corn cobs and cook for 3-5 minutes until tender. Once cooked, drain and cool. Slice kernels off the cob and place them in a large mixing bowl. If using canned/frozen corn, simply thaw and drain as needed.

    Mix the Veggies: Add the cherry tomatoes, red bell pepper, red onion, and cilantro to the bowl with the corn. If using jalapeño for added heat, include it at this point.

      Make the Dressing: In a small bowl, whisk together the lime juice, olive oil, and honey (or agave syrup). Season with salt and pepper to taste.

        Combine: Pour the dressing over the corn and vegetable mixture. Gently toss to coat all the ingredients evenly.

          Add Avocado: Carefully fold in the diced avocado, being cautious not to mash it.

            Chill & Serve: Allow the salad to chill in the refrigerator for at least 30 minutes before serving. This will help the flavors meld together beautifully.

              Taste & Adjust: Before serving, taste the salad and adjust the seasoning with more salt, pepper, or lime juice if needed.
