  • 2.0 cups sweet corn
  • 1.0 cup sharp cheddar cheese, grated
  • 0.5 cup cream-style corn
  • 1.0 cup milk
  • 0.5 cup sour cream
  • 0.5 cup cornbread mix
  • 0.25 cup sugar
  • 2.0 large eggs
  • 1.0 teaspoon garlic powder
  • 1.0 teaspoon onion powder
  • 0.5 teaspoon paprika
  • to taste salt
  • to taste pepper
  • 0.25 cup green onions, chopped

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the cream-style corn, milk, sour cream, and eggs. Whisk until fully blended.
  • Stir in the cornbread mix, sugar, garlic powder, onion powder, paprika, salt, and pepper. Mix until just combined; be careful not to overmix.
  • Gently fold in the sweet corn and grated cheddar cheese until evenly distributed throughout the batter.
  • Grease a 9x13 inch baking dish with butter or non-stick spray.
  • Pour the casserole mixture into the prepared baking dish, spreading it evenly.
  • Place the dish in the preheated oven and bake for 35-40 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
  • Once done, remove from the oven and let it cool for about 10 minutes. Garnish with chopped green onions before serving.
