12 oz spaghetti or your favorite pasta

2 ripe avocados, pitted and peeled

2 cloves garlic, minced

1/4 cup fresh basil leaves, plus extra for garnish

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Juice of 1 lemon

Zest of 1 lemon

1/4 cup extra virgin olive oil

Salt and pepper, to taste

1/4 tsp crushed red pepper flakes (optional for heat)

1 cup cherry tomatoes, halved (for garnish)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set the pasta aside.

    Prepare the Avocado Sauce: In a food processor, combine the avocados, garlic, basil, Parmesan cheese, lemon juice, lemon zest, olive oil, salt, and pepper. Blend on high until you achieve a creamy, smooth consistency. If the sauce is too thick, add a little reserved pasta water until you reach your desired consistency.
