12 oz penne pasta

1 lb Italian sausage (mild or spicy, casings removed)

1 medium onion, diced

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, drained

1 cup heavy cream

1 cup ricotta cheese

1 ½ cups shredded mozzarella cheese (divided)

½ cup grated Parmesan cheese

2 tsp Italian seasoning

1 tsp red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook until al dente according to package instructions. Drain and set aside.

      Sauté Sausage: In a large skillet over medium heat, add the Italian sausage. Use a wooden spoon to break up the sausage into bite-sized pieces as it cooks. Sauté until browned and cooked through, about 5-7 minutes.

        Add Aromatics: Add the diced onion to the skillet and cook for 3-4 minutes until translucent. Stir in the minced garlic and sauté for an additional minute until fragrant.

          Mix Ingredients: Stir in the drained diced tomatoes, heavy cream, ricotta cheese, Italian seasoning, red pepper flakes (if using), and half of the mozzarella cheese (¾ cup). Mix well until everything is combined. Taste and season with salt and pepper as needed.
