Creamy Balsamic Mushroom Chicken Pasta

12 oz fettuccine pasta

2 chicken breasts, sliced into strips

2 cups cremini mushrooms, sliced

4 cloves garlic, minced

1 cup heavy cream

1/2 cup balsamic vinegar

1/2 cup chicken broth

1 cup grated Parmesan cheese

2 tbsp olive oil

1 tsp salt

1/2 tsp black pepper

1 tbsp fresh thyme, chopped (or 1 tsp dried thyme)

Fresh parsley, chopped (for garnish)

Optional: red pepper flakes (for a bit of heat)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.

    Sauté the Chicken: In a large skillet over medium-high heat, heat 1 tablespoon of olive oil. Add the sliced chicken breasts, season with salt and pepper, and cook for about 6-8 minutes, or until they are browned and cooked through. Remove the chicken from the skillet and set aside.

      Cook the Mushrooms: In the same skillet, add the remaining tablespoon of olive oil. Add sliced mushrooms and cook for about 4-5 minutes until they are soft and browned. Stir in the minced garlic and cook for an additional minute until fragrant.

        Prepare the Sauce: Pour in the balsamic vinegar and chicken broth, scraping the bottom of the skillet to deglaze it. Allow the mixture to simmer for about 3-4 minutes to reduce slightly.

          Add Cream and Cheese: Lower the heat and stir in the heavy cream, grated Parmesan cheese, and thyme. Mix well until the cheese is melted and the sauce is creamy. If the sauce is too thick, add in some reserved pasta water to reach desired consistency.

            Combine Ingredients: Return the cooked chicken to the skillet and add the cooked fettuccine. Toss everything together gently to coat the pasta and chicken thoroughly in the creamy balsamic sauce. Season with additional salt, pepper, and red pepper flakes if desired.
