2 large chicken breasts (boneless, skinless)

1 cup fresh basil leaves (packed)

1/2 cup grated Parmesan cheese

1/4 cup pine nuts (toasted)

2 cloves garlic (minced)

1/2 cup olive oil

1/4 cup heavy cream

Salt and pepper to taste

1 tablespoon lemon juice

Fresh basil leaves for garnish

Optional: Cherry tomatoes (halved, for serving)

Prepare the Pesto: In a food processor, combine the basil leaves, grated Parmesan cheese, toasted pine nuts, minced garlic, and lemon juice. Pulse until everything is finely chopped and well combined.

    Add Olive Oil: With the food processor running, slowly drizzle in the olive oil until the mixture becomes a smooth pesto. Season with salt and pepper to taste. Set aside.

      Cook the Chicken: Heat a large skillet over medium-high heat. Season the chicken breasts with salt and pepper on both sides. Add a bit of olive oil to the skillet, then add the chicken. Cook for about 6-7 minutes on each side or until the chicken is golden brown and cooked through (internal temperature of 165°F).

        Make it Creamy: Once the chicken is cooked, reduce the heat to low, and pour the prepared basil pesto into the skillet with the chicken. Stir in the heavy cream and gently mix until the chicken is fully coated and the sauce is warmed through.
